Myeongdong Yeongyang Center is a 52 year-old specialty restaurant in Myeongdong. It specializes in samgyetang (ginseng chicken soup) and tongdak (roasted chicken). In 1960, Yeongyang Center has started to sell tongdak roasted on an electric rotisserie. Since then, the crisp and not-at-all greasy taste has attracted popularity among local Koreans and it has become a must-visit restaurant among foreign tourists.
They use chickens provided by directly owned chicken farm and the owner of the restaurant thoroughly manages all the process of cooking even from the ingredients preparation level.
Their main menus are samgyetang and tongdak. The Samgyetang features its tender meat and thick broth after boiling for 2 hours and the tongdak features crispy and not-fatty taste of the well-drained chicken. Among the menus, sansam Samgyetang stuffed with wild ginseng powder is the most be-loved menu.

Le musée national du palais de Corée offre en ce moment une occasion unique d’apprendre les secrets de préparation de la cuisine royale coréenne. Située entre les murs des jardins du palais de Gyeongbokgung, cette leçon de cuisine exceptionnelle permet de préparer des plats traditionnels, privilege autrefois réservé aux servantes les plus haut placées, nommées « suragan choigo sanggung ».
Ce programme intensif de trois mois a lieu tous les vendredis et dure une heure et demie, et accompagne les participants pas à pas dans le monde culinaire de la dynastie Joseon (1392-1910). Ce cours de cuisine traditionnelle coréenne traite de 12 sortes différentes de plats de la cour que l’on servait au roi. Réputé pour utiliser les ingrédients les plus frais et les plus précieux de tout le pays, le menu possède également une délicieuse touche moderne.
Les participants doivent réserver et s’inscrire avant le premier jour de classe. Le cours se fait en coréen, mais les personnes ne parlant pas la langue peuvent demander l’aide d’un guide du musée du palais sur réservation. Les frais d’inscriptions couvrent le prix des ingrédients qui se monte à 5 000 – 10 000 wons par plat, et doit être réglé mensuellement. Le total est estimé à environ 50 000 – 60 000 wons.
La cuisinière en charge de la cuisine royale, ou « choigo sanggung » n’utilise que les ingrédients les plus rares et les plus précieux venus de la Corée entière et préparés par des chefs de haute renommée. Chaque recette était tenue secrète, et connue uniquement du cuisinier en chef de la cuisine royale, ou « suragan ». C’est un expert en cuisine royale qui donne les cours de découverte de la cuisine royale, présentant plus de 50 plats qui ont fait autrefois les délices des rois de Joseon.
